Easy Enchilada Casserole

Enchilada Casserole – Customizable

Enchilada casserole is so good and can be customized in so many different ways. You can change up the kind of meat that you use, change the type of enchilada sauce that you use and add whatever additional ingredients that you like!

The sauce that I use most of the time is your basic red enchilada sauce, but I also like to use the verde sauce, especially with chicken.

The Main Ingredient List

  • Corn Tortillas
  • Meat of your choice
  • Enchilada Sauce
  • Refried Beans
  • Shredded Cheese

Customizations

The refried beans are, in my opinion, a must-have because it adds to the texture of the mixture, but the addition of black beans is also good. You could add items like Mexican rice, chopped onions, sliced jalapeños, and so many other ingredients to suit your tastes.

Enchilada Casserole makes a fantastic freezer meal, quick to prepare multiples and quick to thaw and warm for supper!

Basic Enchilada Casserole recipe that is simple to put together and can be adjusted to your tastes.

Ingredients

  • Corn Tortillas

  • Meat of your choice

  • Enchilada Sauce

  • Refried Beans

  • Shredded Cheese

Directions

  • Mix refried beans together with your meat and add a bit of your enchilada sauce.
  • Coat each tortilla in enchilada sauce and start layering them into your casserole dish.
  • Layer tortillas, Meat mixture and cheese until top is reached, top off with more cheese.
  • Optional items, black beans, mexican rice, onions, jalapenos, whatever you like, just layer it.
  • Bake at 375 for 20-25 min until warm throughout. Serve with sour cream, salsa, etc.
